So, I’m fully aware there are more than 3 ingredients in this recipe but guys, I am struggling with dinners! Still, it’s mega simple and extremely tasty! (Plus, this is actually my cousins recipe, so you can blamer her.)
4 x salmon fillets
1 x pack of mixed grains (Gourmet Chef or Waitrose own)
Chestnut & button mushrooms
2 x garlic cloves
Handful of sugar snap peas
Fresh beetroot (roasted is best)
1. Season the salmon with salt & pepper, and lay on a lined baking tray. Place in the oven at 180c and set the timer for 15-20 minutes depending on size of fillets.
2. Pan fry the garlic, mushrooms and sugar snap peas in a little olive oil until soft, season with salt & pepper.
3. Microwave the grains in the bag for 2 mins, then add to the stir fry veg along with the spinach – add a little stock to loosen the mixture, you don’t want it to stick.
4. Finely slice the beetroot and lay on the plate next to the grain mixture. Lay the salmon on top and enjoy!
